Keeping it Cool with Hot Salsa: a Recipe to Remember

Do you know the feeling of a fresh tomato in your hand? The thin dust of soil on the ripe, red skin? The “pop” you feel when it’s plucked off the vine? Those are the summer-time moments we all want to save. 

While we can’t bottle up those moments, we can bottle up the taste. This recipe is a keeper. We hope you’ll like it as much as we do! 

Summer-In-A-Jar Salsa
Ingredients

  • 8 pounds ripe tomatoes (about 13 cups chopped)
  • 3 large jalapeno peppers, chopped (seeds and white membranes removed)
  • 3 cups yellow onions
  • 1 cup fresh cilantro
  • 4 large cloves garlic
  • ½ cup white vinegar
  • 1 tablespoon white sugar
  • 2 teaspoons salt
  • ½ teaspoon freshly ground black pepper

Instructions
Boil a large pot of water. Add the tomatoes and boil for 30 seconds, then remove. (This is called “blanching.”) Peel the skins and squeeze the tomatoes to remove the seeds along with excess liquid. Place the tomatoes in a colander to drain. 

Add tomatoes, peppers, onions, cilantro and garlic to blender or food processor. Pulse until you get the desired consistency. 

Return the blended ingredients to the large pot. Add the vinegar. Add all remaining ingredients. Stir to combine. Bring to a boil, reduce the heat to medium and simmer uncovered for 10 minutes.

While the salsa is simmering, sanitize the jars and lids by placing them into boiling water for a few minutes. The best way to do this is to use a ladle and funnel to fill the hot jars with the hot salsa, leaving ¼ inch space at the top of the jar.

Close the lids and place the jars in a boiling water bath for 15 minutes. Make sure the jars are fully covered with water with several inches of water above them. Remove the jars and let them rest undisturbed for 24 hours before moving them. 

PRO TIP: Once you hear the lids “pop,” it’s proof that your canning was a success. 

Store in a cool, dark place. For optimal flavor, use within 6 months but the salsa will keep up to a year.
